Sugar management is an important factor for potato crops, particularly those that end up as potato chips or french fries. This talk will help growers, consultants, and researchers, as well as others involved in preharvest and postharvest management, develop potatoes with desirable sugar levels. The talk will address sugar management in various stages of crop management and storage. These stages cover in-season practices, particularly in relation to potato crop maturity and stress; best practices and timing during potato harvest; managing preconditioning in storage; and storage management.
